Anthony Hopkins definitly comes to mind. From Playing Picazo, The Hunchback, Nixon, and Hannibal Lector.

What about for female actresses? For me it would be Glenn Close and Meryl Streep.

"...The Most Versatile Actor of All Time?..."

dennis rodman. he flopped all the time on defense to get charge calls, but what a rebounder. he even managed to be in some hollywood b-flicks and screw maddona and act like they had a shot at a long term relationship.

now thats versatility!

Morgan Freeman, Tom Hanks, Robert deNiro, Jack Nicholson, Denzel Washington and Robin Williams. Special mention to Edward Norton as one of the best actors of this new generation.

Agree about alot mentioned above though I am utterly amazed no one has mentioned Russell Crowe yet. Harrison Ford also.

Funny thing about great actors is that in even VERY flawed movies they still make them entertaing to watch like when Johnny Depp played a Book Dealer in Europe in a weird Roman Polanski psuedo evil/suspense movie. Forgot the title already, lol. Alex, you forgot to mention Drug Dealer from the excellent 'Blow'.
As for actresses, Jennifer Jason Leigh, Susan Surandon for starters.

NOW that I think about it, you would have to be insane not to put Sir Anthony Hopkins #1

on the true story of a research physician who uses an experimental drug to "awaken" the catatonic victims of a rare sleeping sickness. The first patient to receive the drug (De Niro in an astounding performance) is filled with awe and enthusiasm that teaches the introverted doctor to value life's simple pleasures. Academy Award Nominations: 3, including Best Picture, Best Actor--Robert De Niro, Best (Adapted) Screenplay.
MPAA Rating: PG-13.

I ain't saying the most versatile of all time but a guy who should get some nods is Brad Pitt.
I remember when I first heard about the movie seven years in tibet, and how he was rated the sexiest person alive in some magazine. I was like "good grief this guys a pussy, another new kid in the block novelty act". Then I saw SEVEN with Morgan Freeman, Fight Club, Snatch, Ocean's Eleven and tweleve monkeys. Its like damn looks like I was wrong he definitely is versatile.
Gotta give it up to Denzel Washington as well, very gifted actor who takes on meaningful roles. You will be hard pressed to say a movie that he was in that was bad. Favorite is "GLORY". So I gotta give him some props!!

At the risk of sounding old - Alec Guiness, and Ben Kingsley. Going further back, Gary Cooper, Jim Stewart, and Spencer Tracy (big favorite), even farther back Lon Chaney, and Paul Muni. To name just a few greats.

wil.

By the time his career is over Peter Dinklage could go down as one of the best character actors ever. The little guy can act.
