We have a Italian place 20-30 min's from the house...

they actually gave us the ""House recipe ""...

they had to close...

anyway...

my wife tweaked it a little ... but

the Kale is the KEY..... trust me...

good stuff....

KALE been On Sale here Forever. Organic Kale too, Big Ass Bunches. 99 Cents. I don't know what the fuck is going on with that. Lotta Kale for 99 cents. Man its Good.

I feel like Americans don't eat kale too much.

Fish chowder. Thin broth. The way you would get it in Maine where the fish comes fresh from the cold waters of the North Atlantic.

Also love the Saratoga New York style clam chowder. I get it every time I go there. Part of the mystique of Saratoga.

That zuppa looks great. I grow my own kale. Need the recipe and I'll give it a go.

French Onion. I am sure part of this is the fact that I tend to order this at nice steakhouses so the quality is better than most soups and I am already in a good mood because I have a steak incoming. But when done right, soooo good.

Cioppino. I can't get enough. I do make a basic soup with
Italian sausage (mild)
Beef Broth
Diced onions
Diced potatoes
Can of diced tomatoes
Spices ( oregano, basil, bay leaf)
Swiss chard
All simmered for 3 hours. It gets me through the winter.

split pea is pretty good...you need something with some body to it. most "soup" might as well be an appetizer imo.
