[h=3]RECIPE: DAVID MYERS' PERFECT FRENCH FRIES [/h]Makes four to six servings

INGREDIENTS

  • 6 Idaho russet potatoes
  • Peanut oil
  • Sea salt (Myers prefers Sel Gris, a fine light grey French salt)
METHOD

  1. Peel and square off potato ends
  2. Cut fries into three eighths of an inch batons then soak for two hours changing water after an hour
  3. Dry thoroughly with paper towels
  4. Heat about an inch of oil (just enough to cover potatoes) in a large pot to 290 degrees
  5. Blanch potatoes gently for about two minutes
  6. Place on a paper-towel lined sheet pan and cool in the refrigerator to stop cooking process
  7. Re-heat oil to 370 degrees, cook fries until golden and crispy, about 3 to 4 minutes
  8. Remove from pan and toss with salt to taste and serve immediately

Props to both GB and SB for saving this thread!

Love the comedy and sexiness connection to french fries. I now view fries differently. Ha ha!!
