So tell me, what is the defender supposed to do? His job is to keep the WR from catching the ball without leading with his head or hitting the man in the head. What is he supposed to do?

They showed the replay 20 times now. His shoulder caught him right in the jaw knocking him out. It's so obvious it's not even debatable. Even Belichick won't question that call.
