Just keep going. Postpone games as needed due to outbreaks. They can try to make them up during bye weeks or whatever. If needed use the month after the regular season to make up the games that were missed. There really should be no time constraints, if everything gets pushed back a month thats fine. Football is played in freezing temps, not a huge deal. With few fans in the stands and no other events going on at the arenas the logistics should be simple.
The biggest complaint would probably be teams that stayed healthy get a little penalized by having a one month layoff to get rusty before the playoffs.
