My Wife Just Told Me "EMAIL" is Plural & Singular

Not quite guys.

Email is never plural, but is used as a collective noun.

"How much email did you get today?"

"I got 64 emails."

BTW: Notice my first "sentence" lacked a verb

And a comma...but perhaps that was deliberate.

I started a sentence with "and".
