Oil salt pepper super hot cast iron skillet for a quick flash..then throw into the oven for a couple minutes to get the inside up a bit

10 oz filet, 1.5"-2" thick
Light olive oil, kosher salt, BGE garlic/black pepper blend.

Fire up the egg to 700-800 degrees

Carefully open the lid (needs to be burped or you'll singe your eyebrows)

2 min and flip, cook another 2. Shut the egg down. Leave on for 1 min, then flip for 1 min. Take off, top with horseradish compound butter.....let sit for 5 min.

Perfect medium rare every time.

2" well marbled sirloin grilled on charcoal grill (hotter than gas which allows for a better sear.)

seared till mildly burnt on each side. Red (rare) center. With experience you can press the steak with your finger(s) and know how much it's cooked.

NO seasonings except salt and pepper and mild rub of olive oil before grilling.

And yes, you can pan sear it in a frying pan if the weather isn't right for grilling.

Couldn't help myself. Went out and got a ribeye and some criminis! Gonna try out my new style tonight thanks to the suggestions.

Was told by a guy at Andres steakhouse (Peter Lugers south) in Naples Florida to buy your steaks at least a week before you want to cook it and make sure that it is more greenish than red and then cook it. I try to adhere to this but sometimes it is tough to do.

Who cooks a steak?! You sear the shit out of it, and leave it bloody red in the middle!

I live in an apartment where outside grills are forbidden, so I use my George Foreman grill. Leave the top up and cook each side for 7-10 minutes, depending on thickness. Use McCormick's seasoning and like my Rib-eye medium/well. Simple and perfect for me.

Usually grill it with a little olive oil, marinade with salt, pepper and maybe rosemary if I'm feeling like adding up more flavor. Usually grill an onion next to it. Medium rare.

I'm sure it's been mentioned before but always let a steak get to room temp before cooking and always let it rest for 5 minutes after.

Love a good ribeye on the grill but if I have filet it's getting seared on high heat in a cast iron skillet then thrown into the oven for a bit. Filet's come out awesome when done that way.

For me medium-rare on a charcoal grill (gas is ok, but not the same flavor as charcoal). I also pour a couple of drops of Regina red wine vinegar to make it really tender. (dont worry about the smell you wont taste it)

Cook it over medium heat in butter with garlic and rosemary. Top it with a bit of blue cheese when it's done.

I buy thick ny strip steaks. bring them to room temperature. Salt and pepper them. I use a side open flame burner on my grill to bring a cast iron skillet smoking hot. Put a little butter in the skillet and let it melt. sear the steaks for about 2 minutes each side. Then place on the grill for about 15 seconds each side to burn the butter off. Let sit for about 7-10 minutes and then eat. really good medium rare steak.
