As some have pointed out here, it's an extremely tough and saturated market. I know a few bar owners who were pretty much married to their jobs for years while they got up and running. One of them seems to be working out...last time I stopped in, it was packed pretty good. All of them told me you can literally never have enough capital to keep the place running, so be prepared to risk some decent money if you want to give it a go.
You have the right idea of offering something different. Since there are a million and one bars/restaurants to choose from, why should people go to yours? What makes it any different than the rest? It's almost like when most of us here read about a new hotel opening in Vegas...whoop-dee-do, there are already dozens on the strip. There's got to be a reason or selling point people will choose your place over the others. Is the unique saloon atmosphere enough to do the job? Eh, I dunno.
