There is not a tremendous amount of meat on a duck. When breasted out the two side are about the size of your fist. Not like a chicken with 2 nice legs and wings, as there not much to them.
I cook it all different ways.
Sliced thin and then chicken fried.
I use it in Gumbo's.
Mix it with Venison, Wild Hog when making sausage.
Sliced thin, put half a jalapeno, some jack cheese, roll it and wrap it in bacon, then grill.
Roach - I have a lot of poor families that I have met over the years that will be on the front door step waiting for the meat when I get home from hunting. I barely eat it anymore because a. I got sick of it and b. The people I give it too need it way more then I do. We fed an entire small town when we were up in Canada with the over 200 birds we killed. We are like gods up there to those people. The pastor of the church actually just called the other night to make sure we will be up again next year!

Living in Michigan, I hate hunting. I also understand there is a need to control the animal population, especially deer. You'll understand better when one goes through your windshield on the expressway. I feel as long as the people use the meat, no problem. I know people like Kruser6 who hunt, and donate the meat to needy families.
