anyone know how kicking works at the end of the game? If minn gets a pick 6 do they have to kick the extra point?

For future reference, no, the extra point isn't attempted in College.

"If a touchdown is scored during a down in which time in the
fourth period expires, the try shall not be attempted unless the point(s)
would affect the outcome of the game." Overtime is considered part of the fourth period for this purpose.
